Twenty years ago, Kevin lye owner and chocolatier of Chocolate Necessities in Bellingham, Wash., every-dayed chocolate shops tasting solid milk chocolate pieces. In his search for quality chocolate, he discovered that not a great deal impressed him. Then during a trip to Canada he tasted near of Bernard Callebaut's chocolate and his interest piqued.
