Twenty years ago, Kevin lye owner and chocolatier of Chocolate Necessities in Bellingham, Wash., every-dayed chocolate shops tasting solid milk chocolate pieces. In his search for quality chocolate, he discovered that not a great deal impressed him. Then during a trip to Canada he tasted near of Bernard Callebaut's chocolate and his interest piqued. The desire to create quality, "best of the best" chocolates was born. dashing fellow had slipped behind the line of just being a consumer of chocolate to becoming a chocolatier.
